grilled pineapple-orange chicken pita
- 4 boneless chicken breast
- 1 can chopped pineapple
- 1 can mandarin oranges
- 1 dash of garlic salt
- 2 tbs brown sugar
- pita bread
- dried cranberries
- Salad Dressing / Mayo or your favorite salad dressing
- lettuce
- 1 red onion
- 8 oz. shredded swiss cheese
- 2 tbs. olive oil
Mix the following ingredients into a maranating dish: 1/4 cup chopped or crushed pineapple, 1/4 cup mandarin oranges, all the juice from both pineapple and oranges, olive oil, brown sugar, and garlic salt. Stir untill sugar is disolved. Next marinate the chicken breast for 1 -2 hours or longer for more flavor. Prepare grill for chicken set at med-high for best cooking temp. Grill checken breast untill done but do not over cook chicken. Take off grill and chop chicken into small pieces. Slice red onion into small slivers and saute in olive oil for about 30 seconds on high. Make sure oil is hot before putting onions into it. Do not over cook onions you want them somewhat crunchy. Combine ingredients into pita bread top with dried cranberries, cheese, onions, and your favorite salad dressing. Mayo taste great witth this recipe.
